Creamy Cauli-Soup

Ingredients

200 grams Cauliflower

1 tablespoon Fresh Lemon Juice

1/4 teaspoon Vegetable stock powder in 125ml of Water

Himalyan Salt & Pepper (optional)


Method

1. In a large non-stick pan, add weighed cauliflower to pan & toss for 2 minutes

2. Season with a pinch of Himalayan Salt + Pepper

3. Add the lemon juice & the Vegetable stock to pan

4. Simmer until the cauliflower is tender (approximately 15 minutes)

5. Remove from heat & allow to cool

6. Once cool, add to blender until smooth

7. Pour into a bowl, add Salt & Pepper & serve!
